Many dishes that are left over after the holidays and that we are unable to eat can be used in slightly different ways. You can use the extra vegetable salad to prepare a unique and filling cream soup. The dish in the spirit of the zero waste philosophy is prepared quickly, in about 20 minutes, and easily, because you will need products that are most often found on the Christmas list. You need:
- a glass of water or broth,
- approx. 200 g of vegetable salad,
- two slices of stale bread,
- one onion,
- two tablespoons of olive oil,
- salt and pepper.
How to make cream soup from vegetable salad? Preparation step by step
After Christmas, vegetable salad is usually left uneaten in large quantities and many people do not know what to do with it. So as not to waste ingredients and therefore not waste the money spent on them.
- Fry the diced onion in olive oil or butter in a pot.
- Add the cubed bread and fry, stirring occasionally.
- Then add the salad and water or broth.
- Cook everything for 15-20 minutes.
- Finally, blend the cooked soup and season with salt and pepper to taste.
- Serve the soup with croutons or chopped herbs such as chives, parsley, coriander or rosemary.
