One of the most popular methods of keeping ready meals fresh for longer is pasteurization. You can also prepare bigos with it. Place the finished dish in clean, sterilized and dry jars. However, before you spin them, remember one important thing. If you omit it, pasteurization may fail and the dish will spoil quickly. The point, of course, is to thoroughly wipe the neck of the jar before closing it. After all, it must be tightly closed, and any remaining sauce will make this impossible. Place the prepared product upside down in the oven, turn on the device at 100 degrees Celsius and turn it off only after about 45 minutes. Once the jars of bigos have cooled down, store them in the refrigerator for up to several weeks, and the dish will remain perfectly fresh.

Not everyone knows that ready-made bigos can be frozen. However, before we put it in the freezer, it must cool down well. After that, simply pack appropriate portions into string or plastic bags. Do not put too much bigos in them, but just enough to be eaten immediately after defrosting. When the packages are ready, press them gently with your hands to remove all the air. Thanks to this, they will take up less space in the refrigerator drawer and will be stored better. Place the bigos in the freezer to take it out when the time is right. Remember, however, that frozen bigos can only be stored for six months.
