This old Polish recipe has been passed down from generation to generation in my family, and today I decided to share it with you! Just a few ingredients are enough for you to charm your guests with this unique dish, just like I do every year. What will you need?

Ingredients:

  • 500 g dried mushrooms (porcini mushrooms, bay boletes)
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 parsley, diced
  • 2 potatoes, diced
  • 2 liters of water
  • 2 tablespoons of rapeseed oil
  • 3 allspice
  • 5 junipers
  • 5 peppercorns
  • Salt and pepper to taste
  • Cream for serving

How to prepare traditional mushroom soup from a family recipe? It’s really simple!

Soak the dried mushrooms in warm water for about 2 hours. Fry the onion in oil in a pot until it softens. Add carrots, parsley and potatoes. Fry for a few minutes. Add the drained mushrooms to the pot and cover with water. Then add allspice, junipers, peppercorns, salt and pepper to taste. Cook over low heat for about 1.5 – 2 hours until the ingredients soften and the aroma of the soup fills the kitchen. Remove herbs and spices before serving. Serve the soup hot, decorated with cream.
