Creativity and “something from nothing”. Dishes that were real rarities in the People’s Republic of Poland

Egg cutlets were a popular dinner dish, but the real hit was pork chop with mortadella. Slices coated in egg or milk and a roll, fried in fat and sometimes served with a fried egg, were a delicacy, although they had little in common with real Italian mortadella. Today, many people have fond memories of the quality of cold cuts sold in the times of the People’s Republic of Poland. – Most cold meats in the People’s Republic of Poland were terrible. In my family, mortadella, smoked meat, had a bad reputation – historian Antoni Dudek from the Public Education Office of the Institute of National Remembrance. Missing ingredients were replaced with those that were available, recipes were shared and information about new products added to the store. The ingenuity of housewives was used in books.

Offal was also much more common on the tables than today. Tripe, stomachs in sauce, liver, cerebellum or kidneys (i.e. simply kidneys) are just some of the examples. Other hits were ozorki served with horseradish sauce. It is worth mentioning black pudding, sometimes called “Polish caviar”, which many people have mixed feelings about. Just like cold feet in jelly or jelly in general. During home parties, herrings, pickled mushrooms and the real queen of Polish salads – vegetable salads appeared on the tables.

Real sweets and childhood nightmares. These dishes reigned not only in kindergartens

Milk soups were a nightmare in kindergartens and school canteens not only in the times of the People’s Republic of Poland, although many people remember them fondly today. Just like fruit soups, often called “noodle compote” by malicious people. Rice with overcooked apple and cream or lazy dumplings with sweet breadcrumbs are fonder memories. Among the sweets that are back in favor today, there is also a chocolate block, which years ago … lacked chocolate.
