There is a simple rule that not everyone knows about. Cucumbers are added to the soup at the end of cooking. Otherwise, they will lose their unique aroma. Long cooking will deprive them of their nutritional value, and the potatoes will not soften due to the acid contained in the pickles. Add the cucumbers to the pot when the potatoes are ready to eat.
A simple recipe for cucumber soup. Everyone will do it
To prepare cucumber soup, we need:
- pickled cucumbers 6-7 pieces
- 3-4 medium sized potatoes
- 2 medium carrots
- 1 parsley (root)
- 1/2 small celery
- 2 stock cubes (or chicken/beef stock)
- 4 tablespoons of sour cream
- 2-3 bay leaves
- allspice
- dill or parsley
- salt and pepper
Peel, wash and cut the vegetables into cubes. Boil two liters of water in a pot, add the stock cube, allspice and bay leaf. Then add the chopped vegetables. Cook until soft and add grated pickled cucumbers. Optionally, we can also add cucumber juice. We cook for 10 minutes. At the end, add dill or parsley to the soup, season with pepper or salt.
