Milk flan is a basic dessert in many kitchens around the world, but not everyone dares to make it because it needs eggs or it takes a long time and not everyone knows how to cook in a bain-marie.
Here we present an easy way to get a delicate flan without using an oven. Only kitchen and refrigerator are needed to cool the dessert.
Milk flan recipe
Ingredients
- 1 liter of milk
- 1 tz (200) gr of sugar
- 1/2 cup of cold milk
- 21 gr of unflavored gelatin
- 30 gr of cornstarch or corn starch
- 1 teaspoon vanilla
- 1 stick of cinnamon
for the caramel
- 1/4 cup of sugar
- 2 tablespoons of water
- juice of a lemon
Preparation
Put the sugar in a pan, add the 2 tablespoons of water and the lemon juice and let the sugar take on a slightly golden color. Immediately pour the caramel into the mold so that the caramel is well watered in the bottom and also covering the sides.
Meanwhile, soak the unflavored gelatin in enough cold water (1/4 cup) and let it sit while it hydrates for about five minutes.
In a pot we pour the milk, add the cornstarch, sugar and mix until there are no lumps. Add a cinnamon stick and place the pot over medium high heat stirring constantly until it boils and thickens.
Remove the mixture from the heat and add the dissolved flavorless gelatin. Sift the mixture and pour the flan into the caramelized mold. Let cool in the refrigerator for at least 8 hours before serving.
Also serves as eggnog
This preparation requires a small glass of rum to create the famous eggnog, which is one of the favorite drinks for the season.
In that case, you don’t need to make the caramel. Just follow all the steps to prepare the flan and let it cool. The next day you can blend this mixture, add 1 glass of rum and place in a nice bottle to share with family and friends. (F)
