Oil has become an essential ingredient in cooking and food, mainly because of the wide variety that exists. There are oils of different origins, animal and vegetable, and each one can have different utilities.

Although most oils contain fatty acids, polyphenols, antioxidants and vitamin E, substances necessary for the body, many are harmful to general health. Even those that come from vegetables, fruits or seeds.

David Gillespie, author of the book ‘Toxic Oils’ (Toxic Oils, in Spanish), carried out an investigation on the quality of the oils that people consume. The sunflower oil, one of the most popular in kitchens, is linked to neuronal diseases and cancer. This idea is supported by research from the University of the Basque Country.

Then, what is the best oil for cooking?

The answer lies with nutritionist Diana Beatriz Estrada Rodríguez, a graduate of the National Autonomous University of Hidalgo. According to Estrada, The most recommended oil for cooking is olive oil.

“In many studies done in mice it has been found that olive oil generates less inflammation in the body and less oxidative stressin addition to reducing cardiovascular risks, ”explained the nutritionist.

His statement was seconded by Martin Grootveld of the University of Monfort, who claims that olive oil has low levels of toxic components. However, the expert affirms that “if he could choose between lard and polyunsaturated fats, he would always choose the first.”

Mariana Valdés, nutrition academic at the National Autonomous University of Mexico explained the advantages and disadvantages of certain oils. Liquid oils, for example, have increased abundance of unsaturated fatty acidswhich have benefits.

Margarine, which is considered a solid oil, is more harmful, just like shortenings and butters. Coconut oil is not recommended either, since they have saturated fatty acids, like fats of animal origin. (YO)
