How was the process of filming this series?

A production team of six people flew from Mexico to Quito to record and show what Ecuador has to offer, from tourism, the volcanoes, the architecture of Cuenca, the beaches, as well as being a place with a great gastronomic agenda, rich in traditions and flavors. But above all Ecuador is rich in cocoa production and we think about how to convey that story so that people know it and know that by investing in a good cocoa bar, you are investing in protecting the environment, in dignifying the trade. There were 52 days of recording between the three countries and we spent twelve days in Ecuador.

How was sharing with some Ecuadorian chefs and cooks?

It was very nice because sometimes when talking about Latin American gastronomy, Peru or Brazil are mentioned first, but when you discover the Ecuadorian encocado, you go crazy! Or the cebiche, with the fried plantains or the viche, what a delicious thing! And that transposes to the ingredients that they are also incorporating into their chocolates. I saw some chefs who are very proud of Ecuadorian gastronomy.

What personal learnings do you take from this journey?

I learned as a Latin American to value many of these discoveries. Yjust the fact of knowing the gastronomic offer of Ecuador is culture, knowledge and I am looking forward to returning as a tourist. And I am also left with the vision of Santiago Peralta, the founder of Pacari, who said that in Latin America is a sleeping giant that has given the world many products and that has everything to be a superpower.
