The best Russian salad opens the debate: traditional or free version?

Pedro Antonio Noriega’s recipe, from the Castru Gaiteru restaurant in Llanes (Asturias), has been the winner of the V National Salad Championship 2022, thus becoming the best salad in Spain.

This was decided at the San Sebastián Gastronómika congress. The experts in this dish are very clear about what the salad should have and what not. A theme that has generated a great discussion.

“Whoever says that the good salad is in the south should come to Celorio al Castru Gaiteru,” challenges Pello Noriega, the restaurant’s chef.

Purists say that it can only take potato, mayonnaise, tuna and egg. Everything else, for them, is not Russian salad.

Pepelu likes the salad so much that he has created a website to explain what the true and traditional salad should be like. “He must have his potato, his mayonnaise, tuna on top and the pea is allowed,” she says.

However, outside of that traditional recipe there are multitude of varieties who are also successful.

In El Becerrito, Seville, they follow the purist recipe, although they change the tuna for prawns. His trick, cooking the potato. “We cook it with the water that we have previously cooked the shrimp in,” they explain.

In fact, they also add ham to their salad. “If we analyze old recipe books, the salad was served with tongue cuisine, which I would love but of course, it is very aggressive, so I changed it to ham,” reveals Jesús Becerra, chef at the Becerrita restaurant in Seville.

A position opposed to the puristswho prefer a dish without molds or strange shapes and with mayonnaise on top.
