Just passing by the beer shelves in supermarkets and looking at their contents made Fabrizzi Jurado to become curious and at the same time challenge himself to create one, but craft.

He tried and watched videos on YouTube, however, he did not dare to experiment. Until 2015. Jurado jumped into the arena and grabbed the pot, yeast, malt, water and so on and distributed it to his friends.

“I made my first two fires and I gave them to friends to try and I saw that I was short, After that I made three batches of more than 20 liters and a friend encouraged me to sell them in his shop, surprising me that all those bottles sold quickly.“, says Jurado, 34 years old.

And that impulse made the entrepreneur bought 100 liter equipment and enrolled in intensive courses. “It helped me a lot because there I learned to develop my own recipes with paper and pencil, from choosing the color, flavor, aroma and alcohol strength I wanted in my beer, and so I started to see it as something more serious,” mentions the graphic and flexographic designer. .

So this seriousness led him to search for a name for his already registered brand i He thought of his children: Santino and Sebastián and Santian was born. He didn’t see it finished and he was analyzing which image to use and an iguana immediately appeared in his mind, but with a crown: royal style.

Five years later he was still studying, but he wanted to reach other levels and specialized in technical basics brewing certified by the University of Alicante in Spain to continue improving your product.

“The more you know, the more you want to learn, there is no point where you can say “I already know everything”. So, seeing that the result of my beer was improving, I decided to rent a separate place for all my equipment because it was already taking up practically the whole house, they were in the living room, in the basement, in the laundry room. If you entered my house, there was also a fermenter next to the furniture,” explains Jurado, who has been in his workshop for two years and does everything in that space: from beer making to label design and bottling.

He started selling in between 16 and 20 liters per month, and now there are 100 of them, which is the equivalent of 280 bottles, which contain yeast, hops and two other ingredients. Its market is from Guayaquil, between citizens and business requirements.

There are three types of beer: stout, American pale ale and Belgian blond ale. With the first one he got Ecuador Beer Cup 2019 where he stood out among nine countries and was chosen by 27 judges. A year later, he participated again and won second place.

Beer development requires a long process. Jurado collects water that passes through sediment and activated carbon filters to remove chlorine from the water. Then put it to boil. From there, they weigh the malts and grind them. Connect pots with their pipes to start cooking after hours, which last between 7 and 8 hours.

The latter already has several stages such as maceration, recirculation, cooking and others. “We put in the hops that will give us the bitterness, some of the aroma and flavor of the beer, and then it cools down and the fermenter is properly cleaned and disinfected,” says Jurado, who is also dedicated to design and bottling.

For all these steps, the entrepreneur gets the help of friends. Even though Jurado spends his days making this, he is passionate about his clients feeling good when they consume it.

Later, Jurado intends to make a leap into supermarkets, and for that the sanitary procedure is underway. “I have been advised and meet the requirements of 304 stainless steel equipment, specific cleaning chemicals for the food industry. What I want in the future is to devote myself 100% to it because it is something I could do all day long,” he notes. an entrepreneur who pays the rent thanks to Santian’s income.

However, Jurado’s path was not always full of roses, there were also thorns, and it was also the COVID-19 pandemic due to the lack of clients. “People didn’t come to consume my beer, I thought about going back to 20 liters first, but I decided to continue, spend less on other things and hold out for a while. And here is an important point when people started going out again, my friend joined the team, colleague Stalin Sagñay, who was in charge of attracting as many people as possible to my beer and he is the one who helps me in the days of cooking “, express.

For Jurado, entrepreneurship is a long-term path: “Entrepreneurship is just that, starting something with what is at hand. Every entrepreneur has a different vision of his product and has different production needs. Personally, I would have liked to start with something more, but I can’t complain because I also had a lot of support and we are working on moving forward”.

That is why he suggests perseverance and understanding that there are high and low processes. “Constantly improve the quality, work a lot of extra hours on your project, remember that you are working on something for yourself, especially in the finance courseIt’s something I’m working on right now, not only for my project but also for my personal life,” says Jurado.
