These are the Ecuadorian shrimp presentations that are most in demand abroad

Internationally, Ecuadorian shrimp is recognized for its unmatched flavor, quality, and texture.

“But mainly because the Ecuadorian shrimp industry meets the highest quality standards and is committed to the most demanding practices in terms of sustainability and care for ecosystems in the world,” says José Antonio Camposano, Chairman of the Cordex Board of Directors and President executive of the National Chamber of Aquaculture (CNA).

For shrimp exports, more than 80% of additional dollars entered Ecuador

In 2022, the Ecuadorian shrimp had historical figures of production, export and economic value. Only from January to November 2022, 2,141′,316,957 pounds were exported, according to CNA statistics. And from January to October 2022, shrimp exports represented sales of $6,273.8 million, according to figures from the Central Bank of Ecuador.

Having added value has been key to increasing exports and to meet the demand of different foreign markets.

At the moment there are nine presentations with added value that are in demand abroad. These are:

  1. Tail, shelled without vein (pulled). This shrimp is like a HLSO, but the vein has been removed by pulling on one of the last segments.
  2. Easy peel tail (ezpeel). It is a HLSO shrimp that is easy to peel because it has a cut along the back of the shrimp. This product is deveined.
  3. Peeled and deveined, tail. This type of shrimp is peeled, but the first segment and the tail remain on the shrimp. This product is deveined.
  4. Peeled and deveined, without tail. This type of shrimp is completely peeled and deveined, without tail.
  5. Peeled without deveining. This type of shrimp is completely peeled, but not uncovered.
  6. Peeled without vein (halada). This type of shrimp is completely peeled and the vein has been removed by pulling on one of the last segments.
  7. Butterfly. This type of shrimp is peeled, but the first segment and the tail remain on the shrimp. It is deveined by cutting the back of the shrimp, but the depth of the cut is such that both halves of the shrimp should lie flat.
  8. Skewer. The shrimp used in this product is either peeled tail or deveined peeled tail (pulled), placed on a bamboo skewer. The shrimp can be arranged in various ways, such as: back to back, U-type, or coin-style.
  9. trays. In this product the shrimp is usually decorated in a way that it is ready to be placed in a supermarket. There are presentations in trays, rings, among others, indicated in the CNA.

Whole shrimp continues to be one of the most demanded presentations, especially in Asian markets, according to representatives of exporters.

There are companies like Omarsa SA, the third largest exporter in Ecuador in 2022 and the second in 2021, which also process and export the shrimp known as ointment or Titi (Protrachypene precipua), which is caught in the sea, in addition to the traditional vannamei export, appear on its website.

Others, such as Santa Priscila, the largest shrimp exporter in Ecuador, also have products made with this crustacean, such as the shrimp burger, which is ready to cook, according to their website. (YO)
